Bierocks
These are quite easy to make. Just brown some ground beef. About 1/2 way through browning the beef add diced onions. Shortly after adding the onions, add shredded cabbage. After the beef is brown, add a can of cream of mushroom soup and a couple tablespoons of milk. Stir and set aside. Either pre make a basic white dough or purchase frozer dinner roll dough and thaw. Place a couple tablespoons of beef mixture in center of flattened pancake looking piece of dough and wrap/seal the mixture within the dough. Bake at 350 til dough turns golden (about 25 minutes).
Mary's Trainwreck Casserole
*Cook a roast in a crockpot with green enchilada sauce, a can of diced peppers, diced onions, 2 cans rotel, lots of taco seasoning, diced jalapenos, and a little bit of minced garlic. I usually cook on low for 7 hours-ish. Take the roast out of the crockpot and shred it.
*Add a little flour or corn starch to the sauce that is left in the crockpot and stir til it looks a little thicker.
*To construct the casserole, put some of the sauce in a dish (I like to use a 9x13), then put down tortillas on top of the sauce to cover the entire surface. Put 1/3 of the shredded beef over the tortillas and top with more sauce. Add a layer of grated cheese (I use a mixture of cheddar and monterey jack). Keep repeating this sequence until you are to the top of your dish. top with cheese.
*Bake at 350 for 20-30 minutes.
(This recipe doesn't freeze well--only due to the tortillas in the casserole. You could freeze the shredded beef in the sauce to hurry the process)

Picture Frame Menu
This cute menu can be made for very little. Take a picture frame you have on hand (I used 11x14). Use scrapbook paper and fabric to create a background. Print off the days of the week and glue them onto your background. Place background behind glass like you would a picture. Get a dry erase market and start planning your weekly menu!! You can make a different background for each season or holiday!!
